Sweeteners

For severeal years the household sugar sucrose has been successively substituted by sweeteners to create foods with lower calories and that are anti-caries but nevertheless sweet. The american trend sweet`n`low has reached Europe and leeds to a steady search for new low calorie sweeteners. In the meantime a quantity of different substances is approved in the USA and the EU (see table). Frequently mixtures of sweeteners are used to round off the sweet taste and to simulate the much appreciated taste of sugar. The palette of approved sweeteners ranges from sugar alcohols and synthetic products to herbal sweeteners. The analytical aim is to determine as much compounds as possible simultaneously, which is quite a challenge because oft he diversity of the substances (table publication: Süßstoffe in Lebensmitteln). For the separation a micellar electrolyte is used for all relevent substances and UV detection is done at low wavelength.

  • Description: The standard solution contains twelve different sweeteners. Due to the instability of aspartame phenylalanine and aspartic acid are visible after 24 h (see PDF page 2).

Sweeteners in a chewing gum (brand 1)

  • Description: The chewing gum was homogenized in a concentration of 5000 mg/l and subsequently fitrated. Maltitol, aspartame, sorbit, saccharin and acesulfam as well as two unknown substances were detected.
